Quick Spicy Gochujang Chicken Ramen

The perfect quick lunch or dinner for anyone in a rush but still wants a substantial meal.



Ingredients:

Serves 1

1 Chicken Breast or Thigh

1 Packet Nissin Demae Instant Noodles or your preferred packet noodles

My favourite flavours are Spicy, Miso, Black Garlic or Chicken. You can get them in Sainsburys for about 70p a packet, in your local Asian supermakret or on Amazon

2 Spring Onion Sprigs

1 inch Ginger

2 Garlic Gloves

1 Tsp Sriracha

1 Tsp Gochujang

1 Tsp Golden Caster Sugar or Honey

2 Tsp Sesame Oil

1 Lime

1 Tsp Fish Sauce

1 Egg Yolk

1 Tsp Mayo

Handful Coriander

Your choice of veg (my recommendations)

Mushrooms- chestnut or enoki

Tenderstem Broccoli

Pak choi


Chicken Marinade:

Ground Ginger

Salt

Pepper

Five Spice

Mild-Hot Chilli Powder

2 Tsp Gochujang

2 Tsp Soy Sauce

1 Tsp Sesame Oil

2 Tsp Honey


Method:

  1. Marinate the chicken breast or thigh in the dry spices and leave in the fridge for 30 minutes before placing in frying pan, oven or AirFryer depending on your cooking preferences.

  2. Prepare the veg as you desire, all similar sizes to allow them to cook at similar times. Pan fry veg with some sesame oil, soy sauce and one garlic clove.

  3. Cook the chicken until it is 2/3 ready. E.g. 10 minutes in the AirFryer or oven then add the wet marinade. This ensures it will not burn, instead you will get the perfect glaze around the chicken.

  4. In a bowl mix the packet oil, flavouring powder, Sriracha, Gochujang, Soy Sauce, Fish Sauce, Sesame Oil, egg yolk and mayo in the bowl you wish to serve the ramen in.

  5. Place packet noodles in boiling water for around 1 minute then pour the noodles with their water in the bowl and mix until all combined.

  6. Add the veg into the ramen bowl and place sliced cooked and glazed chicken, coriander and spring onions on top.

  7. Serve with your favourite drink!
